can we add a shunt resistance 250 ohm to pressure transmitter with reference XMLP300PD230 to get the output function (0…5V)- 2 wire

We regret, we can not suggest to use shunt resistor to damp the voltage. We do not have any test done for using 250 ohm resistance to reduce the output to 5V. 

There may be a possibility to split the output voltage using a potentiometer, but we can not guarantee the performance for your application, you should test and confirm whether it works for you or not. 

As per our experience most of the application controller (like PLC, VFD etc...) will have the flexibility to use 0-10 V or 0-5V or 4 - 20mA through parameter setting. So, you can check with whether the controller can be configured to use 0-10 V instead of 0-5V, if the flexibility is available they can use it without any problem.
